A 1K Golf is not one bus. It's three separate CAN networks joined by a single router, the Gateway (address 19, part J533) in the centre of the dash. Nothing else talks across bus boundaries — if a module needs data from another bus, the gateway carries it. That's why some data never appears in a raw log: it never crossed the wire you were sniffing.

Getting data out of it
Module addresses are the standard VCDS service addresses. The three buses and the gateway's position are confirmed 1K architecture. Airbag and immobiliser wiring work is for a qualified auto electrician — disconnect the battery before touching a steering wheel or instrument cluster.
